MEATLESS MONDAY FEASTS!

Tis Monday again! There are a couple of ways to indulge the spirit as a new work week gets underway.

For starters, take out the slow cooker! Then, on Meatless Monday, combine the ingredients for a Slow Cooker Three Bean Chili (p.116) following a recipe from The Vegetarian’s Complete Quinoa Cookbook, edited by Mairlyn Smith. This selection is a veritable feast of nutrition with a mix of vegetables, quinoa, and herbs/spices in just the right amounts–not too spicy, not too bland.  Serving suggestions are provided along with a tip to freeze some of the chill for later meals. I found that storing a two-serving portion worked well for our home.

After you set the slow cooker to work, you might want to make a dessert treat to follow. This cookbook has a tasty treat with Brownie Bites (p.154). Using quinoa flour (available in most large grocery stores) and a handful of ingredients, these brownies are easy to whisk together, bake for a brief time and serve later for dessert.

I highly recommend this cookbook that I received recently as a gift. It is full of excellent recipes, facts on nutrition and colourful photos. Professional home economists have contributed their best!
